Watercress and Spinach Salad with Blood Oranges, Strawberries & Vanilla-Cardamom Vinaigrette
I was super excited to receive some gorgeous blood oranges in my CSA share along with baby spinach and watercress. Of course, I immediately thought of a bright summer salad. I wanted to “warm” it up a bit with a vinaigrette made with cardamom and vanilla beans which are highly aromatic and go extremely well with sweet fruits. You can add fresh ricotta (see recipe here) and candied bacon (see recipe here) to make this (already) tasty salad out of this world. ~Kelly

Happy Valentine’s Day Everyone!
When I think of Valentines day I think Strawberries. This is my rendition of Strawberries and Cream, which are usually associated with this romantic occasion. Plates optional.
To make things a bit easier, you can prepare through step 3, but hold off on roasting them until you are ready to serve.

Hi and welcome to my first post! I thought I’d kick things off with a series featuring my CSA shares (for more info. on all the great reasons to join a Community Supported Agriculture group click here).
If you already belong to a CSA, are thinking of joining one, or have shamefully quit due to defeat by the overwhelming amount of Brussels Sprouts that kept showing up in your box, this will be a fun series of posts to follow. I’ll chronicle my next several shares, writing recipes based on what I get. So, follow along with your shares, or pick up some seasonal veggies at your farmers market, local grocery store, or just check in to see that the heck I’m going to do with all the Brussels Sprouts. I promise I’ll figure out a way to make them taste great.
